Shepherd's Vineyard Greenway, Apex
Shepherd's Vineyard Greenway is a one-mile paved walkway under thick forest between houses in suburban Apex. It is a quiet spot- I only saw three other people walking their dogs on my entire roundtrip walk. It's pleasant to walk along the creek, cross little bridges, hear birds singing, and look up at the tall trees.
After, have a coffee at Common Grounds Coffeehouse in downtown Apex on Salem Street.
For a more sunny, open walk with more people around, try Beaver Creek Lake Walkway, also in Apex.
